“Iai was an incredible experience, far above just a distinction in the Michelin Guide and as good as the 1 Star Michelin restaurants I've dined at in Spain and France. From start to finish it was exceptional service from the staff with excellent communication from Sha, one of their staff beforehand and menu personalisation for my mother's birthday. A really elegant touch. This was the Kappo Omakase, as the CDC was on paternity leave (another great value for a restaurant to have), but it was no less amazing. From the Toro to the signature Foie Gras and Duck, the chefs served a meal that had great respect for the ingredients, an excellent story, beautifully presented and with a great sense of terroir, combining Japanese techniques with unique flavours and Filipino touches. Everything was presented with reverence to the ingredients, not the ego of staff or chef, the kind of passion and dedication you see from Niki Nakayama at N/Naka in LA - it's a humility that allows the brilliance of the work to speak, where staff make you feel included in the story of the food and the journey and are eager to explain the methods and selection of ingredients in the dish before you. The wine list is lovingly selected, mostly on vintage French with an incredible Champagne and White Wine selection uncommon in Manila. The tea served at the end was exquisite and the presentation on the Japanese ceramics and plates was impeccable and unique. The staff have a respect, knowledge and confidence you usually only see in the US or UK, deference without hovering or obsequience, really perfect service. The space is also stunning. From the floral selections, the textures, seating, bag benches, kitchen and the incredible bathroom with Marvis mouthwash, everything is about the guest experience. I will be going back for all the Omakase menus and every seasonal change when I am in Manila. 10/10 can't recommend enough!”

Hahaha. :) Guests can choose from three menu options: kappou, sushi omakase, or premium omakase. Each offering showcases Bruce's skill while catering to different preferences and occasions. The food in Iai is thoughtful, unpretentious, technical and comforting.”
“As rumored, every dish exceeded our expectations. There was always something exciting happening in the mouth as different flavors unfolded. We even joked that it would be perfect if they served hojicha at the end—and to our surprise, they actually did. The dish that moved me the most was the combination of mackerel and bread. I’d love to have it again. Every item was filled with such thought and detail, and it reminded me of how enjoyable dining out can be. The interior also had a very special and stylish atmosphere. No matter which wine we chose, it paired beautifully and tasted wonderful. In the end, one thing we both agreed on was that it would have been nice if the wine servings were just a little bit more generous. Honestly, it felt like the smallest pour we’ve ever had—sorry for saying so. We understand it might be intended as a tasting portion to savor the flavors, but even so, it still felt a little too little. I’d love to recommend this place to my friends, and I’d also like to bring my parents here someday. Thank you for such a wonderful time.”
“My wife and I celebrated our anniversary here and we were treated to the best meal of our lives. Service was impeccable. All the courses were wonderful. We had duck for our main and it was the best duck we've had. Other standouts for me were the oyster pan, the foie gras. Mackerel is such a humble fish but the Saba sushi was amazing. Smoked Toro and Aka Fuji Masu (salmon) was amazing too. My wife loved the chawanmushi. Everything was great! 100/10.”
