The first time we experienced south, central and north Vietnamese cuisine. The staff, Ngoc Nho (Chinese name, 玉念） served us with hearts and professionalism. A place we highly recommend.”

“This new Michelin Selected and 17-course restaurant was phenomenal! We visited on 04 June 2026 while on our annual trip to visit family in Saigon. It was a progressive dinner through 3 floors, a cultural journey across Vietnam, and a culinary experience from Northern Vietnam to Southern Vietnam. Our servers My Tien and Dat thoroughly explained each dish and how to enjoy it. This was a surprise anniversary dinner from my spouse. The souvenirs that I will keep and cherish back in the US were an especially nice touch. Aside from time with family, this was definitely the highlight of my trip. Highly recommend!!!”

“Such a unique fine dining experience that truly takes you on a journey through North, Central, and South Vietnam. I loved how you move throughout different parts of the building during the experience — it made the whole night feel so immersive and special. Every dish was incredibly high quality, beautifully presented, and full of bold Vietnamese flavours. There was so much food too, I left genuinely so full by the end, and the desserts were absolutely delicious. What really made the experience special though was the storytelling behind each dish and the way everything was explained so thoughtfully throughout the night. That’s the kind of detail you hope for when you go to a fine dining restaurant. I personally loved all the flavours exactly as they were, but I also appreciated that they give you options and choices throughout the meal so you can tailor parts of the experience to your own taste if needed. I also went solo and never once felt uncomfortable. The staff were all so lovely, warm, and easy to chat with, which made the experience even more memorable. They even give their little souvenir menu book and tea to take home at the end, which was such a thoughtful touch. Definitely a special experience worth trying if you’re looking for something elevated, immersive, and uniquely Vietnamese.”

“We had such a wonderful night at Nom Dining. From the booking stage all the way to our very last minute there, we were welcomed with warm smiles and such genuine care. Trang, Minh Anh, and Thuy took the time to guide us through each floor, sharing the story behind Nom’s concept and giving us a closer look at how the cuisine represents all three regions of Vietnam. It’s clear how much heart has been poured into building this space as a tribute to Vietnamese culture. As someone who grew up in Vietnam, I felt incredibly proud. Learning that the founders are from Taiwan and Singapore made it even more impressive, the respect and understanding of Vietnamese cuisine runs deep. A special thank you to Chef Chris Fong, everything was done with such deep care and thoughtfulness. The dishes were beautifully recreated and absolutely top-notch, while still keeping the true “soul” of Vietnamese food. At the same time, the chefs weren’t afraid to innovate and share their creative ideas. It was thoughtful, refined, and meaningful. We also enjoyed sake with dinner, and Tri, Dat, and Kim from the Nom team were attentive, patient, and genuinely kind throughout the evening. Our conversation with Ms. Francy, the co-founder, at the end of the night was especially touching, we left feeling inspired and proud of our cuisine. All in all, it was a fantastic experience.
